We are running pretty thin on groceries in the house right now but I managed to scrape together a dinner last night using pork chops we had in the freezer. Usually for pork chops I use a packet of the dry ranch dressing mix, coat each side and then bake in the oven. Being a little limited on things to use but wanting something different than the norm I got a little creative.
Heat some olive oil in a pan.
Throw in the pork chops once heated. While one side is browning sprinkle chicken seasoning (I used Monterrey chicken seasoning) on them. Flip them over and sprinkle more seasoning. I flipped them a few times to really cook the seasoning into the meat and they had a nice browned look. Then I put them in a glass baking dish, put a can of cream of mushroom soup on top (you might want to mix it with some milk to make more sauce) and bake in the oven uncovered on 395 until cooked through.
I served the pork chops and sauce over whole grain noodles and with a side of veggies. Mark LOVED it!! Not bad for something I came up with on a whim and with limited resources! :)
