Crockpot Barbeque Chicken

I'm a little bit behind on my posts! Every day I keep thinking "I need to blog!" or "I want to do a blog post for that!" and then I run out of time and forget. It has been a busy busy week!

Anyways, here is the recipe I made for Mark on Wednesday night. It turned out pretty good and it's super easy (and cheap!) to make. I actually already had all of the ingredients except for the BBQ sauce.

4-6 pieces boneless skinless chicken breasts (you can even throw them in frozen!)

1 bottle BBQ sauce (I used Sweet Baby Ray's, yum!)

1/4 C vinegar (I used apple cider vinegar, I thought it would go good with the BBQ sauce)

1 tsp. red pepper flakes

1/4 C brown sugar

1/2 - 1 tsp. garlic powder

Mix BBQ sauce with all ingredients listed under it. Place chicken in crock pot. Pour sauce over it and cook on LOW for 4-6 hours.

Yep...that's it! I threw it all in on my lunch break and it was good to go by the time I got home from work. You gotta love the crock pot. My love affair with mine has only just begun a month ago or so but it's steadily growing. :)

For a vegetable I cut up zuccini into thick slices, put them in a frying pan with a little water and a little bit of butter, covered and steamed. Very easy and quick and not too heavy when you can't eat dinner until late. :)

Let me know what you think!
